I have given you fair warning.

It takes 10 minutes to mix, 40 in the oven, and man-oh-man is it worth the effort. Toasty, lightly spiced, crunchy, it is a total win and and super customizable. If I add fruit, it is usually some craisins, but I am happy to much this stuff without any add ins.

If you are a granola fan, this is the recipe you MUST try.

frighteningly addictive. I call this "Christmas Granola" because it feels like a holiday right out of the oven all spiced, warm, and toasty. You will never be satisfied with pale store bought granola after you crunch into this.
Recipe type: Breakfast
Serves: about 5 Cups
  • 3 C. old-fashioned oats
  • ½ C. slivered almonds
  • ½ C. shredded coconut
  • 3 TBLS. packed brown sugar
  • 1 scant tsp. cinnamon
  • ½ tsp. ground ginger
  • ¼ tsp. salt
  • ⅓ C. honey
  • 2 TBLS. coconut oil (or veg oil)
  • * optional* 1 cup dried fruit. (raisins, craisins, banana chips, etc.)
  1. Pre-heat oven to 300 degrees F. Line baking sheet with parchment paper. Mix all dry ingredients (first seven ingredients) in a large bowl. Combine oil, honey into small saucepan and warm over medium heat just until mixture is smooth, liquid, and hot. Pour honey mixture over dry oat mixture and toss until well coated. Spread mixture onto prepared baking sheet. Bake until golden, stirring every 10 minutes, about 40 minutes. Remove from oven and press mixture into the cookie sheet so mixture resembles one solid sheet of granola. Cool completely, break apart and add dried fruit if desired. Store in air tight container for up to 10 days.
