Having tested DOZENS of internet pancake recipes, I feel responsible for warning you about all my failed attempts. I have tried, tested, and been disappointed in so may pancake recipes claiming to be "fluffy" that I finally just got to business on creating my own.  

I take pancakes very seriously. You can trust me that these are easy, delicious, with fluff-factor-5000. 

Having a batch of these in the freezer means that you can watch your 5 year old (or your 15 year old) make their own breakfast on busy mornings. My kids love the freedom of being able to grab a freezer pancakes and popping them into the microwave by themselves. I love any small break I can get from serving my kids. Seriously, we do enough!

TO MAKE PANCAKES
  1. Heat a large non-stick sauté pan or griddle over medium/high heat. Pan is ready when a drop of water sizzles on it. In medium-sized mixing bowl, combine all the dry ingredients. in a separate bowl whisk together eggs, milk, and cooled butter. Mix the wet ingredients into the dry until just combined. It's is ok if the batter is lumpy. The batter will be quite thick and that is OK. If you choose, you CAN thin it out by adding a splash of milk at a time, but you will have a less fluffy finished pancake. Using a ladle, or a large scoop ( I use a scoop) drop desired amount of batter onto your hot pan/griddle. My kids like big pancakes so I use approximately 1/4 C per pancake. Because the batter is so thick, I gently spread the batter out onto the pan to form a nice flat circle. These will rise, so it's ok that you spread them thinner! When edges begin to set and bubbles form on top, pancakes are ready to flip. Cook each side about 1-2 minutes. Pancakes should feel firm when you touch the center, not jiggly. Cook in batches until batter is gone.
TO FREEZE
  1. When all the pancakes have been made, transfer them onto a cookie sheet in a single layer. Pop the entire sheet of pancakes into the freezer, uncovered is fine, until they have frozen solid. This takes about an hour, but you can leave them longer.

  2. Now that the pancakes have been flash frozen they will not stick together so you can transfer them to an air-tight container or freezer storage bag. Take as may out as you need at a time.
  3. To re-heat: Warm pancakes in microwave oven for about 30 seconds. You can also pop them into toaster or toaster oven frozen. Use a low setting.
